A Hiker's Breakfast

There is nothing as serene as an early morning hike in the woods, before the summer heat chases everyone indoors. It's a great excuse to make a big breakfast. Here is a quick idea that is tasty and gives plenty of energy for climbing boulders and hoping across streams.

 

If you love to use cast iron skillets (one of my favorites) these items will cook beautifully in skillet or a regular non-stick pan. I use pure butter (non-salted).

All the ingredients below are from a local Trader Joe's, with the exception of the Jimmy Dean Maple Sausage. Hope you have fun creating your own recipe and then hitting the trails to put those calories to good use. Happy Hiking!
